Is it healthy to reuse cooking oil that had been used for deep-frying?
I meant in the context of everyday home-cooking, not at a restaurant. If it's okay to reuse, what's the best way to store the "used" oil?
Yes you can do it. Just beware that oil will go rancid after a period of storage or excessive reuse. It will also get a taste to it.. depending on what you fry. I'd always fry onion rings last because it'll flavor it. So will fish, etc. At my folk's house.. we usually fry the meat first and then the vegetables. They usually come out ok but pay attention to how burned your 'crumbs' get.. nothing tastes worse than burned oil. Ick.
Oh and potstickers are really bad abt flavoring the oil. Generally anything that smells pungent will flavor your oil.
