Little balls in Jennie-O lean smoked turkey sausage?
i find these little light tan balls in my sausage everytime i cook it up to eat it. what are they?!
They are hard balls
It might be ground-up gristle. It's edible, but not something you want to think about too much.

USD 8.99 Suggested Meat Blends: Venison Sausage: Use 20 lbs. venison trim and 5 lbs. of 50% lean pork or beef trim. Old Fashioned Salami & Snack Stick: Use 20 lbs. 80% lean beef trim and 5 lbs. of 75% lean pork trim. DIRECTIONS: Dissolve the 1 oz. of pink cure in 1 pint water. Add water with cure to the ground meat and mix. Add seasoning unit to the ground meat and mix. The cure and seasoning will turn the meat gray. When the meat turns gray, it is ready to stuff. Stuff snack sticks into a 20-22 caliber collagen casing or sheep casings. Stuff salami into 2" to 2.5" beef middles or collagen middles for old fashioned product. Cook or dry according to instructions on collagen middle package. Ingredients: Cure: salt, 6.25% sodium nitrate, 17ppm red #3 and less than 1.0% glycerine added to prevent caking. Seasoning: Salt,38.2% corn syrup solids, spices, garlic, monosodium glutamate, spice extractives, and less than 1% veg. oil to prevent caking.
